You know those meals. You whip them up with any remaining ingredients you have laying around the kitchen.
Tonight David is working late, and I was so tempted to dial up for pizza delivery. Instead, I hit the kitchen and poked around the fridge and cupboards. I made some Near East parmesan couscous, which I am totally addicted to. I then sautéed some green beans with leeks (stolen from our frozen chicken stock bag in the freezer), garlic, lemon slices and chopped almonds.
I then took my $9.99 and purchased The Craft on iTunes. Which, I am sure you’re aware, is an absolute classic.
So, what was your last scrappy meal?

‘Twas only yesterday, actually. I always have some quinoa on hand, and there was a tomato that needed to get used, 1/4 container of salsa, an open can of chipotles in adobo, cilantro and red onion. I also happened to have a can of corn kernels. So it turned into a southwestern style quinoa salad. I had a yam that I also baked and topped with just salt and pepper. Not bad for a last-minute meal.
My favorite single-serving meal came as a result of a scrappy meal–having some ricotta cheese leftover from a weekend dish, I put that into a bowl, seasoned with some salt and pepper, added a 1/4-1/2 cup of Parm to the mix, and then mixed it with hot pasta (orzo, preferably).
My favorite meal that I now eat every morning came from a “scrappy” situation where I had no other ingredients in my cupboards. I mix 1/2 cup of fat free cottage cheese with 1/2 cup of quick oatmeal, 3 packets of splenda and a dash of cinnamon. It’s super thick and keeps you full for hours.
why just the other night I prepared my favorite meal of generic brand mac and cheese from a box and Ikea brand swedish meatballs (shut up, they are fucking good). Delish.
Rice with peas and veggie burger pieces. It was good.
When I was in the process of moving out of my apartment, I didn’t have a lot of food and didn’t want to go grocery shopping. I found some pasta, a can of tuna and a can of olives. I cooked the pasta, drained it, mixed in the tuna, olives, some Greek dressing and a bit of feta cheese. It was surprisingly good and filling
Just a couple days back. Noodles cooked in chicken broth, with left over rice from night before. Salt and pepper to taste.
